Oakland Delaware's “The Great Zucchini Cook-Off” Winners
First Place: Kristen Resh

We were delighted to have so many entries, and so much variety. The dishes
encompassed the sweet to the savory and several spots in between. The tasting
part, after the judging was done, was the best!
First Place Recipe
Italian Zucchini Rolls
Filling:
1 8oz container mascarpone cheese
zest of 1 fresh lemon
2 Tbs chives - minced
1 Tbs thyme - minced
1 small head roasted pepper
1 bunch thin asparagus tips (about 3 inches long). Blanch in salted water for 3
min. Shock in cold water.
2 zucchini sliced lengthwise into ribbons
Pesto: fresh or homemade for dressing
Proscuitto - thinly sliced
Assembly:
Lay out zucchini ribbons. Spread ribbons with mascarpone mixture in thin layer.
Add 2 asparagus tips, and a 1 inch slice of proscuitto. Roll up, secure with
toothpick, and dress with pesto. Serve cold. |

“From the Kitchen of Kristen Resh”
“Salsa Roasted Pineapple Habanero”
Combine:
8 Tomatoes - cored and diced,
1 C. white vinegar,
2 habanero peppers - grilled and minced,
1˝ C pineapple - grilled and minced,
1 medium sweet onion - grilled and minced,
2 medium cloves of garlic - minced,
1 bunch of cilantro - chopped,
4 tsp. sugar,
1 small can of tomato paste,
1 green bell pepper - roasted and diced, 2 tsp. salt
